2023 'Il Dottore' Pecorino
The third vintage of the Il Dottore Pecorino follows on from the very successful 2022 which received a Silver Medal and Best in Class at the 2023 Aust. Alternative varieties Wine Show. The vines were bunch-pruned to reduce the yield and increase flavour intensity and indeed the 2023 wine reflects this management. A complex, flavoursome but well balanced wine has been produced by winemaker Suzanne Little with hopes of going one better this year at the shows. drinking well now we believe it will mature much like a good chardonnay over the next 7-10 years.
